OHIO Culinary Services’ acceptance into Menus of Change Initiative provides opportunity to further impact diet, health and climate

Ohio University’s award-winning Culinary Services was recently accepted into the Menus of Change initiative, a ground-breaking program from the Culinary Institute of America (CIA) and Harvard T.H. Chan School of Public Health. Menus of Change works to realize a long-term, practical vision integrating optimal nutrition, public health, environmental stewardship and restoration, and social responsibility concerns within the foodservice industry and the culinary profession.

Accepted into this initiative in March 2024, this opportunity wouldn't be possible without the support of administrative staff and the executive chef team. Members of the chef team will be attending the Menus of Change Leadership Summit this summer to continue their education. The chefs will learn from experts how to successfully put the Menus of Change principles into action to maximize positive impact on health, climate and biodiversity.

“Ohio Culinary Services is thrilled and privileged to announce its selection to join the prestigious Menus of Change collaborative,” said Senior Executive Chef Matthew Paisley. “Being among the exclusive 47 universities chosen nationwide underscores our unwavering dedication to our student community, not only in providing nourishing, sustainable meals but also in harnessing the educational resources offered by the Menus of Change University Research Collaborative network.”

Additionally, the membership will provide OHIO with a platform to enlighten students and visitors about the nutritional advantages of their dietary choices. Through menus that prioritize seasonal and plant-based options, Culinary Services will support local growers and artisans, while also ensuring that ingredients are harvested at peak ripeness for optimal nutrient content. 

“We are poised to forge impactful partnerships that extend beyond our campus,” Paisley explained. “Through these collaborations, we aim to revolutionize the hospitality industry and empower our guests to make informed, health-conscious dining decisions for maximum well-being.”

Ohio University serves approximately 3.5 million meals per calendar year and is the largest student employer on campus. Culinary Services is a nationally recognized student leader and internship program which provides students with opportunities for class credit and management experience. There are over 200 student leaders in catering, dining courts, cafes, and campus markets.
